Pecan Pie Larabars

These Pecan Pie Larabars will blow your mind! They’re easy to make and really taste like pecan pie. They are a no bake 3-ingredient snack that is dairy free, Paleo, and gluten free.

These healthy Paleo snack bars, inspired by Larabars, are perfect for adding to your kid’s lunches, serving as an afterschool snack, putting in your purse for when a craving hits, and enjoying on road trips. 

Or just make them because it’s easier than making pecan pie!

This no bake gluten free snack bar is so tasty. It’s amazing how only a few ingredients are needed and you end up with that yummy pecan pie taste.

Pecan Pie Lara Bars

This homemade Larabar recipe is so easy to make, you just need some Medjool dates without the pits, some pecans, and vanilla extract. 

Are you craving pecan pie like me? Here’s a way to whip up pecan pie in like 5 minutes!

Try this recipe when that craving hits plus it’s only three ingredients.

The caramel taste for these Pecan Pie Larabars comes from Medjool dates. Medjool dates are nature’s caramel.

Then mix the Medjool dates with pecans and vanilla extract and you really do have a pecan pie flavor that is out of this world.

How to Make Pecan Pie Larabars

De-pit your dates.

Take a date and gently tear it apart and pull out the seed.

Add all of the ingredients into the food processor. I added half of the pecans, all of the dates, and the vanilla, process until crumbly, and then add the remaining pecans to get a nice texture.

Take the mixture and mold it into 5 bars. Wrap the bars in saran wrap or parchment paper.

Store in an airtight container in your refrigerator or freezer.

How to store homemade Larabars

Store this recipe wrapped in parchment paper in an airtight container in your refrigerator for up to 5 days. 

Can I make homemade Larabars ahead of time?

Yes, you can make this recipe ahead of time. I suggest only making them 5 days ahead.

If you make a huge batch you can store the extra bars in the freezer wrapped in parchment paper and keep them in an airtight container.

To defrost, you can place the homemade Larabar on a plate at room temperature and it should defrost in no time.

Ingredients

  • 1/2 cup of Seedless/Pitted whole medjool dates (about 7 dates)
  • 1 cup of pecans
  • 1/2 vanilla extract

Instructions
