I’m in the middle of trying to get someone to take over the lease for my apartment. Like the creative person I am, I strategically starting cooking some apple flavoured pancakes (aka quick apple fritters) before my first applicant showed up. The sweet smell of apples dancing with cinnamon flowed through my cozy space. Is that bad? I see it happen in the movies all the time!

Wow I just love your blog! This looks delicious!!! I used to make this wonderful apple cake that my whole fam would request. And sometimes I would make extra and make little fritters out of them! I'd forgotten all about it! I will be trying your recipe soon!

Found your site yesterday and I'm on Day Two of no sugar, wheat, or dairy. (That's the goal anyway). Any suggestions for not feeling SO lousy? My head aches, my body aches, I'm exhausted. How long will this last? I've known for some time that this type of diet is what my body needs, and I've tried it before, but getting through the early days is really rough.

Your body is detoxing:D This is a wonderful thing. It will last about 1-2 weeks. After that you will get a HUGE burst of energy. You will probably experience a metallic taste in your month while you are in Ketosis. Are you following a specific diet plan? I follow the Atkins diet and they call this the “Atkins flu”. The Atkins diet suggests you drink some broth to elevate the symptoms. You should experience this on any diet that asks you to take out all the processed foods, sugar, wheat, and dairy. Remember it is just a temporary stage. The best part, besides extra energy, after your body detoxes you shouldn't crave sweets the way you did before.

As far as a plan…I'm following the suggestions of Dr. Hyman, author of The Blood Sugar Solution. I did Atkins years ago. I guess it helps to think of this time as a kind of “flu”. Makes me want to take care of myself. 🙂

Hey Carol, I love your recipe, but I have one tiny issue. Baking powder is not inherently Gluten Free and you have to buy specific Baking Powder for it be GF friendly, just want that to be clear for people trying to stick to a precise Gluten free diet. Thanks!
