Quick Low Carb Apple Fritters (Gluten Free)

I’m in the middle of trying to get someone to take over the lease for my apartment.  Like the creative person I am, I strategically starting cooking some apple flavoured pancakes (aka quick apple fritters) before my first applicant showed up.  The sweet smell of apples dancing with cinnamon flowed through my cozy space.  Is that bad?  I see it happen in the movies all the time!

 
That week I advertised on a free site that everyone uses.  I received an enormous amount of responses.  They went something like this: “ohhh I really want to see it!”  A few people left me this response “please call me at ….” Sorry but if I leave you with my e-mail address as my preferred method of communication please use that?  I had to fill out certain criteria for my apartment like: does it come furnished, NO.  Pets allowed, YES.  Bedroom: YES.  I could not believe the amount of people who asked me in e-mails to reiterate all of these answers!
 
Numerous people said “sorry I cannot make it to the open house, can I come later that evening or the next day?”  I offered to allow them to drop by later but call before they show-up.  One person was kind enough to actually keep their after hours appointment.  Thank you dear applicant!
 
Then the dreaded question that should be asked in any city, “have you had any, ummm, problems with your apartment?”  Ohhh what kind of problems would you be referring too?  Smile on my face like I don’t know what they might be referring to.  Furry little friends, cockroaches, and bedbugs were the popular ones.  Yes, no, no.  I had a small rodent problem when I first moved in.  I found a dead mouse in front of my door!  It took two months to clear up.  It was my first time living with mice but apparently it is very common.
 
As much as I love my lovely cozy apartment with views of the CN Tower, the waterfront, and a park I’m really looking forward to living in one place and commuting only between two cities instead of my current three.  One year I calculated my total time spent commuting to be 20 hours every week.  I could have been using that time for a part-time job:S  This year my weekly traveling time is 10 hours per week.
 
I’m sharing with you the recipe that will hopefully leave wonderful, wonderful thoughts about my apartment for someone:D

 
Quick Low Carb Apple Fritter (Gluten Free) Recipe:
 
*P.S. I named this recipe apple fritters because all I could think about when I was munching on them was how donut-like they were.
 
·1 whisked large egg
·½ tsp of cinnamon
·1 small apple – I left the skin on it and sliced it thinly and chopped it a little (leaving the apples pieces still chunky)
·2 tbsp of ground flaxseed
·¼ tsp of baking powder
 
Instructions:
 
1.In a small mixing bowl add the egg, cinnamon, and half of the apple.
2.Take a handheld blender or place the mixture in a processor, and blend until smooth.
3.Add the flax seed, baking powder, and the rest of the apple.
4.Mix it with a spoon.
5.Add some cooking fat to a frying pan (butter, olive oil, coconut oil etc).
6.Heat the frying pan to med-low.
7.Spoon 4 portions onto the frying pan and cook until done.  Flipping once.
8.Eat the chunky apple fritter pancake!
 
Makes four “fritters”
*If one apple is too many net carbs (12 net carbs according to Fatsecret) try ¼-1/2 of apple and add some sweetener.

  1. Wow I just love your blog! This looks delicious!!! I used to make this wonderful apple cake that my whole fam would request. And sometimes I would make extra and make little fritters out of them! I'd forgotten all about it! I will be trying your recipe soon!

  3. Found your site yesterday and I'm on Day Two of no sugar, wheat, or dairy. (That's the goal anyway). Any suggestions for not feeling SO lousy? My head aches, my body aches, I'm exhausted. How long will this last? I've known for some time that this type of diet is what my body needs, and I've tried it before, but getting through the early days is really rough.

    I welcome your help.

    1. Hi Kimberly!

      Your body is detoxing:D This is a wonderful thing. It will last about 1-2 weeks. After that you will get a HUGE burst of energy. You will probably experience a metallic taste in your month while you are in Ketosis. Are you following a specific diet plan? I follow the Atkins diet and they call this the “Atkins flu”. The Atkins diet suggests you drink some broth to elevate the symptoms. You should experience this on any diet that asks you to take out all the processed foods, sugar, wheat, and dairy. Remember it is just a temporary stage. The best part, besides extra energy, after your body detoxes you shouldn't crave sweets the way you did before.

      One to two weeks huh? I can do this. I'll just look forward to that big energy boost you're talking about. As far as a plan…I'm following the suggestions of Dr. Hyman, author of The Blood Sugar Solution. I did Atkins years ago. I guess it helps to think of this time as a kind of “flu”. Makes me want to take care of myself. 🙂

  4. Hey Carol, I love your recipe, but I have one tiny issue. Baking powder is not inherently Gluten Free and you have to buy specific Baking Powder for it be GF friendly, just want that to be clear for people trying to stick to a precise Gluten free diet. Thanks!
