It’s winter and all I have on my mind is going on vacation. Well, that vacation is 4 months away. In the meantime I’ll just pretend I’m on vacation somewhere hot. I’ll continue my weekend walks to the beach (I live within an 8 minute walk to the beach), put on my bronzer and make a Pina Colada.
Ok, are you ready for this because when you drink this refreshing drink you are going to feel like you just stepped into a resort in the Caribbean and a hot cabana boy, who happens to look just like Paul Walker, just handed you this cold, frothy drink.
I had my first Pina Colada in Cuba about 5 years ago. I never heard of this drink before. I must have been living under a rock! I spent my next seven days at the resort drinking this glass of paradise.
The recipe has pineapple in it but the amount of pineapple for the whole recipe is 2.25 net carbs. If you would rather use a different flavour try 3 tablespoons of lime juice, berries, or single crystal light sugar free drink mixes.
To make this experience yours too and with added protein:
Use a blender to mix:
· 1 can of full fat coconut milk (you could probably use almond milk too)
· 3 scoops of vanilla protein powder
· 1/8 cup of pineapple (or a 3 tablespoons of lime juice – adjust for preference)
· Optional – crushed ice
